Instant Pot Sausage and Bean Casserole

A stock (and freezer) cupboard meal, perfect if you haven't remembered to plan anything (not that anything like that happens in this house....honest! ha! )

I used to make this in a slow cooker but last year I bought an Instant Pot, which is fab! An Instant Pot if you haven't come across one is an electric pressure cooker (none of that scary rattling pan action on the stove top!) first and foremost but it also has other functions.  There are settings for rice, slow cooker, steam to name a few and in this house gets used at least 3 times a week.

If I was making this in the regular slow cooker, I would brown the sausages and then add all the ingredients and set on low and leave for at least 8 hours. With a pressure cooker tea can be on the table in under an hour (always great for a harassed student and parent to a toddler and young teen - time can sometimes be a little on the tight side!) - that includes prep and the obligatory Instagram posts!

It is also quite good as we have a fussy family and this meal means I only have to make two meals instead of four (seriously, do you have any idea how frustrating that is?!?).  The only one who won't eat it is Squidge - if it has been within 10 metres of a tomato, no chance!

I will give the instructions for instant pot but if you want to make it in the  slow cooker then just sear your sausages and add everything but not the stock (the instant pot - or any pressure cooker - requires a high water content to be able to create the steam to create the pressure needed to cook the meal) and then stir and set on low for about 8 hours.

To be honest, if you are really short on time then  you could even skip the browning of the sausages but I can't think of anything more unappetising than anaemic sausages....actually I lie, there are far worse things but still an anaemic thank you!

Anyway,  here is my recipe for sausage and bean casserole - hope you enjoy!

SAUSAGE AND BEAN CASSEROLE - serves 4 - ready in less than 1 hour (including prep).


  • 8 sausages
  • tin of beans in tomato sauce
  • tin of chopped tomatoes
  • 1 red onion (cut into eighths)
  • 3 cloves of garlic
  • 2 tsp of mixed herbs
  • 500 ml of chicken stock (I use knorr reduced salt)
  • Vegetable oil
  • Pepper (you can add salt also when seasoning but I prefer not to as I try to keep added salt down)


  •  Add tbsp of vegetable oil to the instant pot and switch to Saute setting
  • Once hot add the sausages and brown quickly and then remove.
  • Pour in stock to deglaze pot. Use a wooden spoon to help loosen the caramelised bits at the bottom of the pot (if these are left they will burn when you cook the casserole).
  • Add beans, onion and sausages, and herbs and crushed garlic.  Give a quick stir.
  • Put chopped tomatoes on top (I don't stir at this point - apparently tomatoes are likely to burn if they are near the bottom of the pot and then stop the pot reaching pressure.  Not sure if that is true but not taking that risk!
  • Put lid on, set on manual for 25 minutes and when finished remove lid.
  • Set on saute (low heat) and simmer for 5 minutes just to thicken the sauce - you can at this point add cornflour to thicken if you wish - I don't generally bother.

It is lovely served with mash and green beans or in a bowl with crusty bread!
